So here we are. The letter ‘G’. It’s the gastronomic guardian of so many delightful things: ‘Gourmet’, ‘Green’, ‘Glorious’, and let’s not forget, ‘Glas’.

Nestled in the heart of Dublin, Glas is a haven where fabulous meets foodie. If you’ve ever thought vegetarian and vegan dining couldn’t possibly be luxurious or indulgent, prepare to be deliciously wrong.

Quietly Queer and unapologetically fabulous; imagine stepping into a scene from The White Lotus, but without the drama. Floral, indulgent, yet never crossing into the realm of tacky. The space hums with gentle chat, and the team whirrs around like well-oiled gears in an engine. You don’t just dine at Glas; you’re held in an embrace from the moment you step in.

THE FOOD

At €45 for two courses and €54 for three, Glas offers what I’d call ‘affordable luxury’. The menu is a minimalist masterpiece: four starters, four mains, and four desserts. No meat in sight, but trust me, you won’t miss it.

We kicked off with an amuse-bouche of courgette fritters paired with cashew yoghurt—a little teaser that set the stage for the culinary theatre to unfold. For starters, the Charred Aubergine with Black Rice Fritter and Plum Salsa was a revelation, while the Carrot Rillettes with Smoked Waldorf Salad was like a garden party for the senses – so clean and light with the flavours perfectly balanced.

For mains the King Oyster Mushroom with Braised Borlotti Beans was a symphony of textures, and the Braised Cabbage with Creamed Kale & Orzo was comfort food elevated to an art form.

And dessert in Glas is not optional. The Chocolate Mousse with Almond Crumble and Figs was sinfully good, while the Peanut Slice with Caramelised Plums offered a playful twist on classic flavours with perfect seasonality.

THE EXPERIENCE

Flawless. That’s the word. From the moment we walked in, to the moment we left, the service was warm, welcoming, and impeccably timed. It’s clear that Glas isn’t just a restaurant; it’s an experience curated with the kind of attention to detail that makes you feel seen, heard, and most importantly, well-fed.

THE VERDICT

Whether you’re a committed vegetarian or a carnivore looking to dip your toes into greener pastures, Glas is a must-visit. It’s affordable luxury at its finest, and a dining experience that leaves you feeling not just full, but fulfilled.

      1. Sounds delish I must try it out. It doesn’t seem that long ago that the best a vegetarian could hope for in town was a scaldy Eddie Rockets burger or a Abrakebabera kebab (also scaldy).
